What is Wonton Mee?

Singapore wonton mee is a Cantonese noodle dish of thin, springy egg noodles served either dry (tossed in a soy-lard sauce with a dash of chilli) or in a light, clean chicken or pork broth, topped with boiled wontons filled with seasoned minced pork and prawn, char siu (barbecued pork), and a garnish of leafy greens. The dry version — the more popular choice — features noodles tossed in a savoury, slightly sweet sauce with a glossy sheen from lard, balanced by the sweetness of char siu and the delicate skin of the wontons. Originating from Hong Kong and Guangdong culinary traditions, Singapore's wonton mee has evolved its own character — often with a darker, slightly spicier sauce, chilli-pickled green chillies on the side, and a strong preference for the wiry, al-dente noodle texture that locals call "springy."
