Singapore prawn noodles (hae mee) is a soul-warming dish centred on a deeply flavourful broth made by boiling prawn heads and shells for hours until the stock turns a vivid reddish-orange, intensely sweet and savoury with the essence of the sea. Served over yellow egg noodles or bee hoon (or both), the dish is topped with fresh prawns, pork ribs or pork slices, halved hard-boiled eggs, beansprouts, kangkong (water spinach), and crispy fried shallots, accompanied by sambal chilli on the side. The prawn stock — which may also incorporate pork bones for added depth — is the linchpin of a great bowl; the best hawkers guard their broth recipes closely. A staple of Singapore's hawker culture with roots in Hokkien and Teochew communities, prawn noodles is equally beloved as a morning breakfast or a late-night supper.
