What is Hokkien Mee?

Singapore hokkien mee is a dish of thick yellow egg noodles and thin rice vermicelli stir-fried together in a rich prawn and pork stock, topped with prawns, squid, egg, and pork belly, then served with sambal chilli and calamansi lime on the side. Unlike its Malaysian counterpart which is darker and drier, Singapore's version is wet-style — the noodles absorb the deeply flavourful prawn broth and are finished with a squeeze of lime that cuts through the richness. The prawn shell broth is the soul of the dish; the best hawkers boil it for hours to extract maximum sweetness and depth. Originating from Fujian immigrants, hokkien mee became a fixture of Singapore's hawker culture and is widely regarded as one of the city-state's most satisfying after-dark supper dishes.
