Despite the name, Singapore carrot cake contains no carrots — it is made from white radish (daikon) steamed with rice flour into a firm cake, then chopped and wok-fried with eggs, preserved radish (chai poh), garlic, and spring onions. It comes in two versions: white (fried without dark soy sauce, resulting in a pale, crispy egg crust) and black (tossed with dark soy sauce for a sweeter, caramelised flavour). Known locally as chai tow kway in Hokkien, the dish is a Teochew staple brought to Singapore by immigrants from the Chaoshan region of Guangdong. Whether enjoyed as a hawker breakfast, lunch, or supper, carrot cake's crispy exterior and soft, eggy interior make it one of Singapore's most comforting and well-loved street foods.
